3 cups shredded rotisserie chicken
½ cup sun-dried tomatoes, chopped
1 cup heavy cream
1 cup cream cheese, softened
1 tbsp olive oil (from sun-dried tomato jar)
1 medium onion, diced
2 cloves garlic, minced
1 tsp Italian seasoning
1 tbsp tomato paste
4 cups chicken broth
1 can diced tomatoes (14.5 oz)
1 cup elbow pasta (or your preferred pasta)
2 cups baby spinach
¼ cup chopped fresh basil (for garnish)
Salt and pepper to taste


Instructions

  1. Sauté the onions: Heat olive oil in a large pot over medium heat. Add the diced onion and sauté until soft, about 5 minutes.
  2. Add garlic and seasonings: Add minced garlic, Italian seasoning, and tomato paste. Stir for about 1 minute until fragrant.
  3. Simmer the broth: Add chicken broth, diced tomatoes, and sun-dried tomatoes. Stir well and bring the mixture to a gentle simmer.
  4. Cook the pasta: Add elbow pasta and cook for 8-10 minutes, or until the pasta is tender.
  5. Add cream cheese and cream: Reduce heat and stir in cream cheese and heavy cream, making sure the cream cheese fully dissolves into the broth.
  6. Add spinach: Stir in the baby spinach and cook until it wilts down, about 2-3 minutes.
  7. Finish and garnish: Season the soup with salt and pepper to taste. Garnish with fresh basil before serving.
