4 boneless skinless chicken breasts about 6 ounces each
2 eggs beaten, more if needed
1 cup all-purpose flour
1 teaspoon salt
½ teaspoon black pepper
1 ¾ cups Panko bread crumbs
¾ cup cornflake crumbs
½ cup shredded Parmesan cheese
2 tablespoons dried parsley
1 ½ teaspoons garlic powder
Instructions
- Preheat the oven to 375°F.
- Flatten the chicken breasts to a ½-inch thickness.
- Beat the egg and set it aside. In a separate shallow dish, mix together the flour, salt, and pepper.
- In another dish, combine the Panko breadcrumbs, cornflake crumbs, Parmesan, parsley, and garlic powder.
- Coat each chicken breast in the flour mixture, dip it in the egg, and then press it into the crumb mixture to ensure it sticks.
- Place a metal rack on a large rimmed baking sheet, or spray the baking sheet with cooking spray if you don’t have a rack. Arrange the chicken on the rack or directly on the pan and spray the top with cooking spray.
- Bake for 20 to 25 minutes, until the juices run clear. Broil for 2 to 3 minutes until the coating is crispy and the internal temperature reaches 165°F.
