Crispy Parmesan Chicken With Creamy Garlic Sauce

Description

Crispy Baked Parmesan Chicken features a crunchy golden coating, with a juicy, tender chicken breast inside. You’ll be amazed that it’s baked, not fried! It’s perfect for enjoying on its own or as a delicious addition to a chicken sandwich!

4 boneless skinless chicken breasts about 6 ounces each
2 eggs beaten, more if needed
1 cup all-purpose flour
1 teaspoon salt
½ teaspoon black pepper
1 ¾ cups Panko bread crumbs
¾ cup cornflake crumbs
½ cup shredded Parmesan cheese
2 tablespoons dried parsley
1 ½ teaspoons garlic powder


Instructions

  1. Preheat the oven to 375°F.
  2. Flatten the chicken breasts to a ½-inch thickness.
  3. Beat the egg and set it aside. In a separate shallow dish, mix together the flour, salt, and pepper.
  4. In another dish, combine the Panko breadcrumbs, cornflake crumbs, Parmesan, parsley, and garlic powder.
  5. Coat each chicken breast in the flour mixture, dip it in the egg, and then press it into the crumb mixture to ensure it sticks.
  6. Place a metal rack on a large rimmed baking sheet, or spray the baking sheet with cooking spray if you don’t have a rack. Arrange the chicken on the rack or directly on the pan and spray the top with cooking spray.
  7. Bake for 20 to 25 minutes, until the juices run clear. Broil for 2 to 3 minutes until the coating is crispy and the internal temperature reaches 165°F.

Notes

Larger chicken breasts may require extra cooking time. Ensure the thickest part of the chicken reaches 165°F.
The nutritional information is based on using ⅔ of the crumb mixture, as there is typically some leftover. Discard any remaining crumbs.
