- 8 oz cream cheese (softened)
- 1/3 cup buffalo sauce
- 1 cup shredded cheddar cheese
- 1 pound cooked and shredded chicken
- 5 flour tortillas (10-inch)
- 1 tablespoon green onions, thinly sliced
- 1 tablespoon ranch dressing mix
Instructions
- Prepare the buffalo chicken filling: In a large bowl, combine 1 ½ cups of shredded chicken, 8 oz of softened cream cheese, 1 cup of shredded cheddar cheese, ⅓ cup of buffalo sauce, and 1 tablespoon of ranch dressing mix. Stir until well mixed.
- Assemble the pinwheels: Lay the tortillas flat on a clean surface. Evenly spread the buffalo chicken mixture on each tortilla, leaving a small border at the edge.
- Roll the tortillas: Carefully roll each tortilla tightly, making sure the filling stays inside. Wrap each rolled tortilla in plastic wrap and refrigerate for at least one hour to firm up.
- Slice the pinwheels: After chilling, remove the plastic wrap and slice each tortilla into 1-inch thick pinwheels.
- Serve: Arrange the pinwheels on a platter and serve chilled or bake them at 350°F (175°C) for 15 minutes for a crispy texture.
Notes
- Let your cream cheese come to room temperature before using it so it softens and mixes easily.
- For a milder flavor, use a less spicy buffalo sauce; or spice it up with hot sauce and jalapeños for an extra kick.
- Add some shredded carrots and chopped celery for additional texture. Diced black olives are also a great option.
- Be sure to refrigerate the pinwheels for at least 3 hours before serving.
- Each tortilla should yield about 6 slices, excluding the ends.
